How do you log your applications?

I've previously just used printlns and tracing-to-stdout, but I'm now making a "proper" application. I wanted to use opentelemetry with Honeycomb but there's essentially no unified documentation and it's giving me a headache, to be frank. There are like ten libraries, all with next to no docs besides the docs.rs struct explanations types.

Are there other good options? I'd just like something that doesn't slow my code down much, stores in a centralised place, lets me filter by log type, and doesn't require a PHD in esoteric knowledge. If I just dump stdout to a file will that slow my code down?
